Recipe | Chocolate Chip Muffins

There’s something about Christmas time that has me feeling very Martha Stewart-y. I am in the kitchen trying out my hands on all sorts of things and churning them out to the delight of friends and family.

A few days ago, a made these super yummy, super easy chocolate chip muffins using a recipe by Laura Vitale- my cooking icon. She’s seriously amazing guys, you should check out her website-, I have tried out so many of her wonderful recipes.

What you need

2 cups of Flour
1 Tbsp of Baking Powder
½ tsp of Salt
1/8 tsp of Ground Cinnamon
1 12 oz Bag of Milk Chocolate Chips
2/3 of a cup of Whole Milk
½ cup of Melted Unsalted Butter
2 Tbsp of Sour Cream
2 Eggs
½ tsp of Vanilla Extract
1/3 cup of Granulated Sugar
1/3 cup of Brown Sugar

  • Pre-heat your oven to 200 degrees celsius, line your muffin tray and set aside.

  • Combine dry ingredients- flour, baking powder, salt and cinnamon and set aside
  • Coat chocolate chips with some of the flour and set aside. Coating them ensures that they don’t sink to the bottom of your muffin.

  • Beat wet ingredients together (eggs, melted butter, sugar, milk, sour cream) either by hand or using a mixer.

  • Add dry ingredients to the bowl and mix together to combine.

  • Scoop batter using a deep spoon and distribute evenly into the muffin tray. Spray the edges with cooking spray to avoid it sticking to the sides.

  • Bake muffins for about 15 to 18 mins. Laura advises that at the 15min mark, stick a toothpick into one muffin, if it comes out clean with no wet batter on it then your muffins are ready, if not bake for another 3mins.

That’s it! You guys really should try this out; it makes the most delicious, melt-in-your-mouth muffins. Oh and by the way, the sour cream is Laura’s secret ingredient for moist muffins so be sure to include! Let me know how it goes if you do decide to give this a try.

My Guide to Buying Gifts for Men this Christmas….

As promised, here are my gift suggestions for the leading men in your lives. Shout out to the Hubz for collaborating with me on this one :)

Game Console: If your man is into games and still doesn't have the Sony PS4, now is the time to get it! The last time I was in the US, I almost missed my flight due to a hunt for the PS4, story for another day -_-. So if you decide to get the PS4 you will need to get actual games to go with it. Top games at the moment are Fifa 14, Call of Duty Advanced Warfare and Destiny. You can buy this console and games from Game in the Palms.

Watch: Remember what I said about too many handbags being impossible for women, well for men, that would be watches. A new watch is always guaranteed to have a guy grinning from ear to ear. The Tag Heur Carrera WAS2110.FC6180 is for the grown and sexy gentleman, all black, crocodile skin goodness! Check the Polo Avenue store on Ozumba Mbadiwe, they just might have this or something just as luxurious in stock.

Bespoke Clothing: Now this I think is a tricky one, but the Hubz swears that it will be a winner mainly because of the thought and effort that goes into pulling this off. It would require you stealing taking any old suit or blazer from your guy's wardrobe and giving it to a designer to make him a new one. It would have to be a really good one to give you the best fabric and cut within a really short timeframe. Hubz' recommendation is Kimono Kollection who made his wedding suit, the guy is genius!

Perfume: Every man loves his perfume so he will be blown away when he opens up a box of Tom Ford's Private Blend Collection Set. It contains 6 12ml bottles of some of their signature fragrances, they describe it as "a gift for true scent connoisseurs. Check the Essenza store in the Palms and Ikeja shopping mall for this and other perfume gift options.

Shoes: Every guy needs a classic pair of Gucci loafers in his wardrobe and the Hubz' current favourite are the Roos horsebit ones. According to him they can be worn with formal, traditional and native looks! Well worth the money, if you ask me. Visit the Polo Avenue store to check for these shoes or if you have access to purchasing from Selfridges and getting them in Nigeria, they have them in stock.

So i hope I have been able to inspire everyone- men and women alike on their gift buying this Christmas. Have fun watching your partners' faces light up on Christmas morning- best feeling ever!

My Guide to Buying Gifts for Women this Christmas...

Hi Guys,

Christmas is a time when we show love and appreciation for our friends and family by exchanging gifts so I decided to do some research and share some suggestions for anyone that's struggling with what to get a loved one :)

Perfume: You can never ever go wrong with gifting a lady a glorious smelling bottle of perfume, it is always a winner! Even better if it comes in a gift set with matching lotion and bath gel. My pick at the moment will be the Giorgio Armani Si Eau de Pargum Gift Set. Deliciously sensual fragrance, you can read my review here. Another is the Marc Jacobs Daisy Gift Set, lovely fragrance, even lovelier packaging for the holidays. I think the biggest perfume shop in Lagos is Essenza and they are located at the Palms as well as the malls in Surulere and Ikeja, 

A Handbag: Show me a lady that doesn't love handbags, I will show you a million that do. Trust me when I say there is no such thing as too many handbags so this is always a great choice for a gift. Top on my handbag wishlist is the Celine Edge bag *swooonnnn*.. Some shops that sell authentic luxury designer goods in Lagos are The Polo Avenue (Ozumba Mbadiwe, VI) and Florence H (Musa Yaradua, VI), check them out...

Makeup: For the girly girl, makeup and/or tools is always guaranteed to put a smile on her face. Thankfully brands like MAC and Inglot are now here in Lagos (at the Palms Shopping mall) so you have a wide variety of eyeshadows, blushes, powders, lipsticks and brush sets to choose from. Just make sure you get help from the store assistants :)...

If you were looking for an all-inclusive makeup gift set, the Urban Decay Naked Vault is the one!! It contains three of their cult favorite eyeshadow palettes (Naked, Naked 2 and Naked 3), three eye pencils, three lip glosses and three blushes/bronzers! My heart is happy just looking at this beauty! 

A Gadget: Don't let no one tell you that us girls are not gadget people.. We do love our technology- phones, tablets, headphones, bring it, we will take it! My pick in this category will be the hottest phone out there right now- Apple iPhone 6, preferred color- GOLD! <3

Shoes: You know that quote by Marilyn Monroe that says "Give a girl the right shoes and she can conquer the world"? Well, who am I to argue with a fashion icon-I agree %150! I have had my eye on the Valentino Rockstud Pumps for the longest and the beautiful thing is they come in a wide variety of colors and finishes. It is really hard to pick one color but these embellished ones will be perfect for a really special lady :) Again you could find these shoes at the shops mentioned earlier.

Our Honeymoon | Turks and Caicos

So I got married to the love of my life! It was beautiful, it was amazing, it was the best day of our lives! I decided not to bother posting wedding pictures on here since they are already up on another website. If you would like to see all the beautiful pictures, click here...

What I want to share here is one of the equally important parts of the wedding ceremonies- the honeymoon...My husband and I honeymooned in the beautiful island of Turks and Caicos, located southeast of the Bahamas. As with everything related to our wedding, I wanted the honeymoon to be perfect so we both burnt the midnight candle, browsing the inter webs until we happened upon the beautiful T & C. It was love at first picture and we decided on the spot that we would make it our destination. 

After a whole year of wedding planning and an amazing amazing series of events, we boarded a flight from Lagos to London to Miami to Turks and Caicos- 17 hour long journey! We checked into our hotel- Beach House at around 8pm and we were pleasantly welcomed at the reception and quickly ushered to our room. I use the word room, very loosely…

Fun Activities

The Beautiful Beginnings package we bought at the Beach House included a number of fun activities for 7 night duration of or honeymoon. We also paid to do some other stuff outside of the package.

Snorkle and Conch Cruise

We went out on this cruise of the beautiful island on the first day. It was amazing being able to view the gorgeous water whilst one of our tour guide gave us some historical facts about the island. 

When we got to a certain part of the water, the other tour guide jumped into the water to catch conch. He very kindly made us a delicious conch salad that everyone on the cruise enjoyed. I found it delightful that we were eating food fresh out of the water! Oh by the way, Conch is a shell fish that is almost a staple food on the island. We ate so much conch while we were there, we had withdrawal symptoms when we got back, haha.

Then it was time for the main business of the day- Snorkelling!  I was really freaked out because I'm not the best swimmer but I just had to because I didn't want to be Debbie Downer, lol. It was so much fun. If you ever have an opportunity to go snorkelling, please take it! It was so beautiful under there, the fish, the coral reef, everything! All I could think of was the sheer magnitude of God's power.

This was just a nice day on the beach with great food and alcohol :) We also played some fun water sports…

The food on the island was simply amazing…I returned 3kg heavier but it was totally worth it! Beach House particularly has an amazing restaurant, we had a lot of our meals here then went out every other night for dinner. Our package came with a $20 credit for breakfast ever day which made us very happy bunnies…

Salmon Eggs benedict…best thing on the breakfast menu by far!!! We had this almost everyday...

Fish Fry

This is a weekly fair that happens on the island, attracting lots of tourists. It's basically an open air event with different vendors selling traditional food, drinks, souvenirs etc. There was also a great live band, we danced till our poor legs could not take it anymore....

Turks and Caicos was an experience that we will never forget, it is forever etched in our memories <3 <3 <3. I must warn you though, if you plan to holiday here, be ready for the crazy costs. Everything on the island is really expensive because they have a population of approx. 30000 and almost everything is imported.
I had a million pictures from our time away so it was really difficult to pick the ones for this post but I really hope you enjoyed viewing the pictures. Turks and Caicos is my number one honeymoon destination recommendation, it is truly a slice of heaven on earth :)
